Welcome to Week 42 of Meal Plan Monday!
I’m down 7lbs, but I just can’t do Whole30 any more. I just didn’t feel like it was healthy for me. I got the point I didn’t want to eat AT ALL. And since my goal is to get healthy…that didn’t seem to fit the plan.
By adding in a few things I felt I was able to balance more and eat more…and not send my body into starvation mode where I lost nothing. I’m only about 1/2 way to my goal..so I still need to be making good choices daily, but I think I can do that by lightening up on the strict diet. (I also think it’s time to start exercising regularly! YIKES! Who’s got time for that?)
Meal Plan #42
Monday – Potato Soup
Tuesday – GF Mexican Pizza
Wednesday – GF Chicken Pot Pie
Thursday – Veggie Pad Thai
Friday – Gluten Free Pizza Biscuits
Saturday – Chicken, Broccoli & Cheese Calzones
Sunday – Eggplant Lasagna
I do try and do as much gluten free cooking as I can (though it’s not 100% so if you need gluten free just be sure to double check ingredients). I usually refer to the cookbook Gluten Free on a Shoestring for making breads and cakes.
