I have to start by saying this gluten free 4th of July treat was one of the tastiest treats I’ve made in a LONG time. Everyone loved it!
I’ve decided to really make an effort to go back on my gluten free diet, so I used the Gluten-Free on a Shoestring cookbook for the sugar cookie recipe. It’s not a sweet cookie, but that works well for this gluten free 4th of July treat because it allows the cream cheese frosting and sweet berries to really shine.
This didn’t take long and doesn’t have to be gluten free. You could also just buy one of those sugar cookie rolls at the store and make this even easier.
Supplies
1 container of blueberries
1 container of strawberries
Cream Cheese Frosting Recipe ( I omitted the lemony stuff)
Gluten Free Sugar Cookie Recipe
This sugar cookie recipe isn’t the exact one from her book, but it is from her website and should be about the same…but the book has loads of recipes…I did a review a while back that you can read here and I’m really enjoying digging into it further.
How To
Super easy…just follow the instructions for the Gluten Free Sugar Cookie but make 1 large cookie instead. Once it’s cooled, top it with the cream cheese frosting and berries.
