My kids love pancakes. And I love them too because I can hide things in them and sneak some healthy vegetables in on them (check out my sweet potato pancakes).
Pancakes are pretty much a weekly meal (aka brinner) around here. It’s something easy that I know my kids will actually eat without complaining.
They are also an easy meal to make a little healthier with minimal fuss. You can easily use gluten free flour or shred and/or puree vegetables to include in the mix (spinach, zucchini, carrots).
Carrie at CarrieElle.com made these alphabet pancakes BY HAND! (super impressed) She’s got some tips on what worked for her.
Plus she did a little research about the best ways to freeze homemade pancakes (which I have NOT been doing and need to start).
